Fruity Pebbles Cookies

Where did Fruity Pebbles cereal come from?

I don’t know about you, but for me, The Flintstones was a childhood classic cartoon. They have a character on that show named Pebbles, so when Post Cereal was looking for a partner for its “Pebbles” cereal, The Flintstones was a natural match! The characters were printed on the box, the name changed from Pebbles Cereal to Fruity Pebbles to allow other variations (such as Cocoa Pebbles), and the rest is history!

Is this cereal hard to find?

It may have been a while since you picked up any sugary cereals at the store. But rest assured, you can still find Fruity Pebbles on the shelf of local grocery stores, and even here on Amazon. (If only the prices were still the same as they were back then!)

Fruity Pebble Cookies Ingredients

Gather the ingredients you’ll need for your cookies.

  • Dry ingredients: all-purpose flour, baking powder, baking soda, kosher salt, and granulated sugar
  • Wet ingredients: cream cheese, unsalted butter (melted), vegetable oil, one large egg, milk, and vanilla extract.
  • Cereal: 1 cup of Fruity Pebbles cereal

To make these cereal cookies, you can mix the dough in the bowl of a stand mixer with the paddle attachment or you can use a hand mixer (or electric mixer). Of course, you can always mix by hand with a wooden spoon! Just make sure to scrape down the sides of the bowl when needed.

First, preheat your oven to 350 degrees and line a cookie sheet with parchment paper. Then, in a small bowl, whisk together the flour, baking powder, baking soda, and salt.

In a separate mixing bowl, beat the cream cheese and sugar on medium speed until smooth and well-combined, about three minutes. Then add the melted butter, vegetable oil, milk, egg, and vanilla extract and mix thoroughly. The batter should be smooth and creamy.

Gradually add the flour mixture to the wet ingredients until just combined. Then add the Fruity Pebbles cereal and mix well. Using a large cookie scoop or tablespoon, place cookie dough balls onto the prepared baking sheet about an inch apart.

  • Pro tip- you can sprinkle a few extra Fruity Pebbles on top of each cookie ball to add a little bit more crunch and to let that color really shine through!

Bake cookies for 9-11 minutes or until just lightly golden brown. They will spread slightly, but not too much. Allow these colorful cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.

How to store leftover Fruity Pebbles cookies

You can store any leftover delicious cookies in an airtight container for up to a week. Let them cool completely to room temperature before storing.
