This recipe for Skillet Spinach Lasagna is an easy and fast way to make that lasagna you’ve been wanting on a busy weeknight, and it’s made even better for you with the addition of fresh spinach.

This classic lasagna recipe with a twist can’t be beaten! I like to serve it with a green salad made with fresh spring greens and slices of my Grandmother’s Italian bread.

Why make Skillet Lasagna instead of Traditional Lasagna?

I crave lasagna often during the day, but I either think of it at 4 o’clock in the afternoon or know I won’t get it ready in time. So I’ve fallen in love with this great recipe that is quick and easy to put together for a busy weeknight. With this recipe, you don’t have to spend so much time to boil noodles, layer noodles, or spread sauce and ricotta in the pan. 

Lasagna is such a hearty meal that you’ll have plenty of good leftovers for the next day, and possibly the day after that. And don’t get me started on the best part– that amazing mozzarella topping. Everything just works for this dish!

Skillet Spinach Lasagna Ingredients

Gather your fresh ingredients for this delicious meal. Here’s what you’ll need:

  • ground beef
  • 1 tablespoons olive oil
  • 1 small onion, chopped
  • 4 garlic cloves, minced. You can use fresh or dried garlic. ½ tsp equals about 1 clove.
  • 2 cups chopped fresh baby spinach
  • 2 teaspoons Kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons oregano
  • 2 teaspoons basil
  • oven ready dry lasagna noodles, broken (you could also use lasagna sheets)
  • 2 cups water
  • 1 14.5- ounce can diced fire-roasted tomatoes
  • 1 15- ounce can of tomato sauce
  • 2 teaspoons tomato paste
  • 1 – 2 teaspoons sugar (depending on taste)
  • 1 cup ricotta cheese
  • 8 ounces fresh mozzarella cheese, cut into 10 slices
  • ¼ cup chopped fresh basil

How to Make Skillet Spinach Lasagna

This lasagna comes together so quickly! Don’t be turned away by the long list of ingredients– the process is actually really simple and so tasty!

First, preheat the oven broiler to high. You’ll only need the broiler for a few minutes, but make sure you are using an oven-safe skillet like a cast iron skillet.

Crumble and Cook Meat: In a large skillet, heat the olive oil over medium-high heat. Add the onion and minced garlic and saute until light, about 3-5 minutes. Add the ground beef and cook until completely browned, draining any fat if necessary.

Place the chopped spinach in the pan with the beef and stir until the spinach wilts. Mix in the salt, pepper, oregano, and basil. 

Stir in Noodles and Cheese: Turn the burner to medium heat, then add the broken lasagna noodles to the pan in a single layer, followed by water, tomatoes, sauce, tomato paste, and one teaspoon of sugar (or more if desired after tasting). Stir all ingredients well until combined and then cover and cook on medium-low for about 8 minutes, stirring occasionally.

Broil: Remove the skillet from the heat and alternately place the mozzarella and dollops of ricotta cheese around the pan. Place the skillet into the oven and broil for 3-5 minutes until the cheese on the outer edges melts and bubbles. Carefully remove the skillet from the oven with pot holders- it will be VERY hot!

Garnish and Serve: Sprinkle the lasagna with chopped fresh basil and enjoy! Isn’t that easy?

Flavor Variations

You can always do a few things differently to change this easy skillet spinach lasagna recipe up and make it work for you:

  • Meat: This can be a meatless dish, or substitute ground Italian sausage or turkey!
  • Noodles: If you don’t have lasagna noodles, you could use any kind of large pasta like bowtie or rigatoni. It doesn’t change the flavor, just makes it more like a pasta casserole! You can also use whole wheat pasta or gluten-free noodles.
  • Add-ins: Why not add some more vegetables? Add a few more handfuls of fresh spinach or add carrots, zucchini, eggplant, etc. to the recipe when you are cooking the meat and onions so they can cook evenly. You could also sprinkle some parmesan cheese on top for a little smoky flavor! For a little heat, sprinkle in some red pepper flakes!
  • Don’t have oregano and basil? You could also just use Italian seasoning.

Storing Leftover Lasagna

Once the skillet lasagna cools, put it in an airtight container. It can last in your fridge for 3-4 days. You can also transfer the whole thing into a freezer-safe container and freeze it for up to 2 months. When you’re ready to eat it, thaw overnight in the fridge, then place it in a nonstick skillet and bring it to a boil. Cover the lasagna and let it simmer until heated through while stirring occasionally so it doesn’t stick to the pan.

Instructions

  • In a large oven-proof skillet, heat olive oil over medium heat.
  • Add the onion and minced garlic and sauté until light, about 3 – 5 minutes.
  • Add the ground beef and cook until completely browned. Drain any fat if necessary.
  • Place the chopped spinach in the pan and stir until spinach has wilted.
  • Mix in the salt, pepper, oregano and basil.
  • Preheat the oven broiler to high.
  • Add the broken lasagna noodles to the pan, followed by the water, tomatoes, sauce, tomato paste, and one teaspoon sugar (add more sugar if desired after tasting).
  • Stir until well combined and cover.
  • Reduce heat to medium low and cook for about 8-10 minutes. Stir occasionally to make sure the noodles don't stick to the bottom of the pan.
  • Remove from heat and alternately place the mozzarella and ricotta cheese around the pan.
  • Place the skillet into oven and broil for 3 – 5 minutes, until cheese has melted and bubbles. CAREFULLY REMOVE FROM OVEN WITH POT HOLDERS!!! IT WILL BE HOT!!
  • Sprinkle with the chopped fresh basil.
