Apple-Streusel Cookies


If apple crisp became a cookie, these Apple-Streusel Cookies would be it. Each cookie is loaded with fresh apple and a wonderfully warm blend of cinnamon, nutmeg, and allspice, but it’s the Oat Streusel and Spiced Glaze that really evoke all the best fall feelings.

Apple-Streusel Cookies
 
Makes 24 cookies
Ingredients
  • ½ cup (113 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (110 grams) firmly packed light brown sugar
  • 2 large eggs (100 grams), room temperature
  • 1½ teaspoons (6 grams) vanilla extract
  • 3 cups (375 grams) all-purpose flour
  • 1 teaspoon (5 grams) baking soda
  • 1 teaspoon (3 grams) kosher salt
  • ½ teaspoon (1 gram) ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • 1¼ cups (140 grams) ¼-inch-diced Pink Lady apples
  • Oat Streusel (recipe follows)
  • Spiced Glaze (recipe follows)
Instructions
  1. Preheat oven to 375°F (190°C). Line 4 baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugars at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  3. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and allspice. With mixer on low speed, gradually add flour mixture to butter mixture, beating until just a few streaks of flour remain. Add apples, and beat just until combined. Using a 2-tablespoon spring-loaded scoop, scoop dough (about 36 grams each), and place 2 inches apart on prepared pans.
  4. Bake, one batch at a time, until cookies start to melt, about 4 minutes. Sprinkle 2 teaspoons (about 7 grams) Oat Streusel on each parbaked cookie, and gently press into top. Bake until streusel and edges of cookies start to brown, 6 to 8 minutes more. Let cool completely on pans. Drizzle Spiced Glaze onto cooled cookies.

Oat Streusel
 
Makes about 1 cup
Ingredients
  • ½ cup (40 grams) old-fashioned oats
  • ¼ cup (31 grams) all-purpose flour
  • 3 tablespoons (42 grams) firmly packed light brown sugar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground allspice
  • 2 tablespoons (28 grams) cold unsalted butter, cubed
Instructions
  1. In a medium bowl, combine oats, flour, brown sugar, salt, cinnamon, nutmeg, and allspice. Using a pastry blender or 2 forks, cut in cold butter until butter is pea-size. Pinch and rub pieces of butter into dry ingredients with fingertips until mixture comes together. Freeze for 10 minutes or until ready to use.

Spiced Glaze
 
Makes about ⅓ cup
Ingredients
  • 1 cup (120 grams) confectioners’ sugar
  • 2 tablespoons (30 grams) whole milk
  • ¼ teaspoon ground cinnamon
Instructions
  1. In a small bowl, whisk together all ingredients until smooth. Use immediately.
