Made from a boxed cake mix, these decadent chocolate Cosmic Brownie Cookies are to die for! Reminiscent of that iconic childhood lunchbox treat, Cosmic Brownies, these copycat cookies will have all the chocolate lovers reaching for seconds and a tall glass of milk!

Little Debbie Cosmic Brownies are my guilty pleasure! I spent years buying them and other treats for my children’s lunchboxes. Of course, I had to sneak one for myself when they weren’t around. Ok, and even if they were around, I’d sneak into a closet to eat it.

Cosmic Brownie Cookies

Usually, store-bought treats aren’t my favorite, but there’s just something about that fudgy brownie that I love. Those rainbow candy chips on top just make me happy! Where are my other Cosmic Brownie lovers?

This cookie version mimics that classic brownie treat with a rich chocolate flavor, topped with a smooth chocolate frosting and candy sprinkles.

Ingredients for Cosmic Brownie Cookies

What ingredients do I need for these fudgy Brownie Cookies?

Because we are using a cake mix, you only need a handful of simple ingredients to make these baked cookies:

  • One box of chocolate cake mix
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips

For the Chocolate Frosting:

  • 1 ½ cups powdered sugar
  • 1/3 cup of cocoa powder
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • Candy sprinkles or rainbow chips for decoration

Do you need to refrigerate the dough before making these cookies?

This cookie dough does need to be refrigerated for a short time, but only 10-15 minutes. Even with that extra time, these cookies are quick and easy to make!

Refrigerating the dough makes it easier to handle; otherwise, these cookies can be a bit sticky.

How to make Cosmic Brownie Cookies

Prepare: Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper or a silicone baking sheet. Alternatively, you could spray it with nonstick cooking spray.

Make the dough: In a large mixing bowl, combine the cake mix, vegetable oil, and eggs. Stir until the powdered cake mix is just incorporated. Then completely mix in the cup of chocolate chips. Place the dough in the refrigerator for 10-15 minutes.

Bake the cookies: Use a medium (2 tablespoons) cookie scoop to scoop even-sized cookie dough balls onto the prepared cookie sheet, placing them 2 inches apart. Bake cookies for 8-10 minutes. Allow cookies to cool fully before frosting.

  • Note- don’t overbake these cookies! They should be set in the middle but still soft right out of the oven. They will firm up as they cool.

Make the frosting: While the cookies cool, mix together powdered sugar, milk, cocoa powder, vanilla extract, and almond extract in another large bowl. Use an offset spatula to spread the frosting on top of each cookie, then sprinkle the candy sprinkles on top. Enjoy!

  • This frosting dries quickly, so I recommend frosting one cookie at a time and adding sprinkles before moving on to the next cookie. Otherwise, your sprinkles won’t stick.

How to store leftover Cosmic Brownie Cookies

These baked cookies can be stored at room temperature in an airtight container for 2-3 days.

You could also bake these chewy brownie cookies ahead of time and freeze them before frosting. Store them in a freezer bag or other freezer-safe container. When you’re ready to serve them, allow them to thaw to room temperature, then frost them as directed in the recipe.

What if I can’t find Rainbow Chips like Cosmic Brownies have?

You can use any candy topping for these cookies if they don’t have rainbow chips in your local grocery stores. Try rainbow sprinkles or mini M&M’s. You can always find rainbow chips here online.

This recipe isn’t quite a copycat recipe, as we substitute a boxed cake mix for the dry ingredients. Still, it tastes remarkably like Crumbl’s fudgy cookie!
