Using potato chips in cookies also adds an element of surprise, too. When someone takes a bite of these cookies, they are met with a delightful little bit of crunch that is unexpected yet delightful.

I recommend using a thicker potato chip for this recipe, as it will give you better flavor and crunch. I used Ruffles wavy potato chips and they were perfect!

It’s time to roll up our sleeves and get baking! Here are the simple ingredients you need to create the ultimate sweet and salty treat:

  • 2 ¼ cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 ½ cups granulated white sugar
  • 2 ounces of cream cheese, room temperature
  • 7 tablespoons unsalted butter, softened
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 tablespoon of milk
  • 1 teaspoon pure vanilla extract
  • 2 cups wavy potato chips, slightly crushed (divided)
  • 1 ¼ cups of semi-sweet chocolate chips (or milk chocolate chips)
  • Additional salt or Maldon sea salt for sprinkling

How to make Chocolate Chip Cookies with Potato Chips

Prepare: First, preheat oven to 350 degrees F and line a baking sheet or sheets with parchment paper.

Dry Ingredients: In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Wet Ingredients: In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl), beat the butter, cream cheese, and sugar until smooth and well-combined at medium speed, about three minutes. Add the vegetable oil, egg, milk, and vanilla. Mix thoroughly until smooth and creamy.

Combine: Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Add one cup of the potato chips and the chocolate chips, then mix completely.

Bake Cookies: Use a medium cookie scoop (2 tablespoons) to place dough onto the prepared cookie sheet about an inch apart. They will spread slightly, but not much. Bake the cookies for 13-15 minutes or until just slightly golden brown.

Remove from the oven and immediately press additional crushed potato chips into the top of each cookie and sprinkle each cookie with a pinch of salt. Allow the cookies to cool on the baking sheet for a few minutes, then move them to a cooling rack to cool completely.

  • In a mixing bowl, beat the butter, cream cheese and sugar until smooth and well combined, about 3 minutes.
  • Add the vegetable oil, egg, milk, and vanilla. Mix thoroughly until completely smooth and creamy.
  • Gradually add the dry ingredients until just combined. Add 1 cup of the potato chips and the chocolate chips, and mix completely.
  • Using a medium (2 tablespoons) cookie scoop, place scoops of dough onto prepared cookie sheet(s) about an inch apart. They will spread slightly, but not too much.
  • Bake cookies for 13-15 minutes or until just slightly golden. Immediately upon removing from the oven, add some additional crushed potato chips to the top of each cookie and sprinkle each with a small amount of additional kosher or Maldon salt. Allow cookies to cool on baking sheet for a couple minutes before transferring to a wire rack.

Notes

You’ll want to use a thicker potato chip for this recipe as it will give you a better texture and crunch. If sprinkling with the finishing salt, use slightly less of the Maldon salt than the kosher because of its’ stronger taste and larger crystal size.
